I'm all for simplicity. In the little over a year that I've run this blog, I've not posted anything ridiculously fancy, mostly because I don't have the skills, but also because I value food that is accessible. You're probably never going to see me attempting super fancy pastries or dishes you can get at a fancy restaurant. I love that sort of food too, but I don't think that's the point of my blog. The point of my blog is delicious treats and meals that anyone can make. Seriously.
Speaking of delicious treats, let's talk about brownies. These aren't your made from a box brownies, but they're just as easy and taste WAY better; I promise. They're fudgey but not overwhelmingly so. I ate most of the pan myself, because I've been living in my house mostly alone for the past couple of weeks. Nathan is in Brazil, Brooke is home with her family, and Meg has been back and forth between our house and her parent's house. I've been lonely and made to feel less guilty about my brownie consumption since no one was here to judge me. Brownies
-Preheat the oven to 375 degrees and lightly grease a 9"x13" pan and set aside. -Add ingredients to bowl in order that they're listed, and beat until smooth. -Pour batter into pan and bake for 25-30 minutes. Let cool completely before cutting. Seriously. HOW EASY WAS THAT? Do it. I believe in you.

It should be noted that it's really fucking tough to get a nice photo of any food item at night when the light source in your kitchen just doesn't cut it. Things get shiny where they shouldn't and nothing is as pretty. BUT YOU DO IT ANYWAY. Pot roast is pretty much one of my favorite meals in the world. My grandparents own a beef cattle farm, so growing up, we ate a lot of beef. My dad makes a great, tender pot roast (the dude is where I get my faux cooking chops, I'm sure of it.) I've been in need of some comfort food recently, as things haven't been going well for me. My depression has been hitting me super hard. A week ago, I decided to withdraw from the University of Minnesota, to finally focus managing my PTSD symptoms. It's not realistic for me to share a campus with my rapist, and I shouldn't have to. Right now I feel like he won and that UMN is his, which I know isn't true. I will have a degree in journalism on my own time. I will get there. Right now I have more important things to focus on... Like fall apart meat and carrots. Mmmm. Pot roast. I made mashed potatoes on the side because I've never been impressed with potatoes actually cooked in a roast. They're always a little mealy and sometimes under-cooked. Plus, mashed potatoes always give me an excuse to use gratuitous amounts of butter. That, I can get behind. Pot Roast (serves 8-10)
-Liberally season roast with salt and pepper. Set aside on a plate. -Heat 2-3 tablespoons of olive oil in the bottom of a dutch oven over medium-high heat. Throw in onions and garlic and sautee until lightly browned. Remove onion-garlic mixture and set aside. Sautee the carrots, then remove. -Add more olive oil to pot if necessary, and turn the heat up to high. Sear all sides of the roast then remove and place on a plate. -There will be some brown bits on the bottom of the pot. We totally want those! Pour one cup of beef stock into pot and whisk to remove bits from bottom. Add the rest of the beef stock balsamic vinegar, then the roast, onions, garlic, and carrots. Place sprigs of rosemary and thyme in the pot. -Cover pot and place roast in the oven heated at 275 degrees for four hours. Serve with mashed potatoes or whatever floats your boat. I got up to grab a glass of water and this sneaky dude got into my pot roast. He loved it so much that he needed a nap afterwards. Aw, Bingers. I love you.

I've enjoyed seeing you a couple of times a week for the past two years that I've lived in Minneapolis. You will be missed. If I've learned anything in my twenty years on this planet, it's that things rarely go the way you intended. For instance, today I planned to blog pumpkin s'mores cupcakes (a recipe I've been crafting for two years and believed to have perfected), but I over-mixed the batter or something, and the cupcakes didn't turn out. Fortunately I had also planned on attempting to make my first acorn squash soup. I expected today my recipe would be bland or grainy or something, and entirely unbloggable. I got lucky. This soup is bursting with flavor, and after spending an excessive amount of time in my blender, is out of this world creamy. This was everything I needed today, and I didn't even know it. Acorn Squash Soup with Bacon and Parmesan
(8-10 servings)
-Pierce acorn squashes four times each, then place them individually in microwave and cook for 8-10 minutes. Slice open to allow them to cool. Once they're cool enough to handle, scoop out seeds and discard, then scoop out squash to discard the skin. Set aside. -In a large pot (or Dutch Oven), melt butter over medium-high heat. Saute onions until translucent, then add the carrots, celery, garlic, salt and pepper. Cook until tender. -Add squash and vegetable stock to pot, and let simmer on low heat for 20 minutes. -Puree soup in a blender; I had to do mine in two batches since there was so much. Just make sure to not overfill your blender! Return puree to pot, and add cream, Worcestershire, and Parmesan. Stir and allow to sit for five minutes. -Ladle into bowls; serve with bacon bits and more Parmesan. Happy Monday, everyone. Happy Labor Day, folks! Today officially means the end of summer, which I celebrated at the Great Minnesota Get-Together, or you know, the State Fair. Pictured above, is a State Fair staple, or Sweet Martha's cookies. They're the bomb dot com and it's a requirement to get them every year. This was one of the first times we didn't take home an entire bucket of cookies, but I had all sorts of other delicious, deep fried things.
It's crazy to think summer is over, but I can't wait for fall. My house will finally be cool enough to turn on the oven more often, I'll get to play with warm spices, apples, pumpkin, and squash, and class will start.
