A Day in the Life of Pinterest -- I read this a couple of weeks ago, and it still makes me giggle. Strawberry Cookies & Cream Cake -- Everything about this is perfect. Chocolate Mousse -- Joy the Baker deserves two links in a row, just because she rocks. University of Minnesota's Medical Research Mess -- Carl Elliott is brilliant. UMN has many more, equally as large messes to deal with. Women Dropping Polite Hints in Western Art History -- Mallory Ortberg is bae. "I need a minute to look at something that isn't your mustache. Just a single minute." Lilac Sugar Donuts -- So pretty. Lemon White Chocolate Scones -- Yum. Bottomless Brunch -- Reason 359 I love Minneapolis. That's all for now, folks. Does this photo speak for itself? I'm beginning to understand more isn't necessarily better, complicated doesn't always mean sophisticated, and that some things are best left alone. Coming from the highly anxious twenty year old, who rarely shuts up about her neuroses and takes to blogging; this is weird. I know. My life has seemingly always been one complication after the next. In my interpersonal relationships, I fear silence, I fear the lack of verbal communication. But aren't some things better left unsaid? Not everything has to be complicated. Yesterday, I put together a simple strawberry pie, as adapted from Joy the Baker. I put all of my love into this pie, and didn't let anything get unnecessarily complicated. It isn't trashed up, it isn't fancy. It's something your grandmother probably made at one point. And to me... It's perfect. Strawberry Pie
For the crust:
For the filling:
-To prepare the crust: whisk together flour, sugar, and salt. Dump cubed, cold butter into dry mixture and begin to knead with your hands until butter is evenly dispersed, then pour buttermilk into mixture. With your hands, keep kneading until no dry ingredients are visible. Separate dough evenly into two disks, wrap with plastic wrap, and let rest for one hour in the refrigerator. *Note! The way to get the best pie crust, is to keep that butter COLD! -Preheat oven to 400 degrees and line a cookie sheet with parchment paper- set aside. On a well floured surface, roll out one disk of dough into a 12 inch circle. Lay over a 9 inch pie plate, press in, and trim off edges of crust. Return to refrigerator. -In a bowl, combine the strawberries, lemon juice, cornstarch, salt, sugars, and ginger. Let sit for 10 minutes, as juices will begin to form. -Pour strawberry mixture into prepared pie plate. Return to fridge. Roll out other disk of dough, and cut into inch thick strips. You can follow a tutorial to make a perfect lattice pie crust here, but I wasn't really aiming for that. I reveled in the imperfections. Drizzle your beaten egg (egg wash) on the crust, then sprinkle with sugar. -Place pie plate on the cookie sheet, and bake in the oven at 400 degrees for fifteen minutes. Reduce heat to 350 degrees and bake for an additional 30 minutes, or until the crust is golden. Let pie cool completely before eating. Happy Sunday. Take some pleasure in the small things.
