It's been autumn for a month now, and I'm just finally getting around to a "currently digging" with autumnal imagery. I'm going to get better, I swear. It's hard to believe I've been running this blog for two years now (and I still have yet to purchase my URL; I hope to purchase it by the end of 2016). I've grown so much and I still have so much growing to do. I'm just about to start over, again. I hope that only good things come from this new beginning.

I have honestly and seriously tried to work on this blog post about five times now, but the laptop I've been using is a piece of crap and usually won't even let me click on "New Post" when I open up my website. Today, however, it appears to be working and we're going with it. About a month ago, the management company that houses Banana Republic (aka my job) brought in a peck and half a bushel of apples for us to enjoy. Fifty apples is a lot of motherfucking apples. I let the apples stay at work for a week, but then stole all 15 remaining of them to bring home. To make up for stealing all the apples, I decided I would need to bring in a treat to work. Apple crisp and pie seemed like they would be way too messy for my co-workers. I spent a solid half hour searching for recipes until I stumbled upon King Arthur Flour's Old Fashioned Apple Cake with Brown Sugar Frosting and died. I know I didn't cut it so well (I was REALLY excited to eat it) and this isn't my best food photography, but I swear to sweet Jesus, that this cake is it. The apples keep the cake oh so tender and *gasp* moist. I could bathe in a vat of brown sugar frosting and be a happy woman. I'm not joking. I haven't eaten breakfast yet and my stomach is growling for this cake. Apple Cake with Brown Sugar Frosting

- Preheat oven to 325 degrees and grease a 9"x 13" pan. Set aside. -To make cake, mix all ingredients together into bowl and beat until incorporated. The batter will be a consistency between a cookie dough and a brownie batter. -Spread batter evenly in pan and bake for 45 minutes, or until golden brown and a toothpick inserted comes out clean. Let cool completely before frosting. -To make the frosting, melt butter in small pan over medium heat; stir in brown sugar and salt and cook until sugar dissolves. -Add milk, bring mixture to a boil, then remove from heat and let sit for 10 minutes. -Add powdered sugar and vanilla. Beat until frosting comes to easily spreadable consistency. Add more powdered sugar if necessary. |
