While I was growing up, I was spoiled rotten by my dad when it came to food. He is an excellent cook, and, well, he dominates our kitchen. As I got older and would try to make a simple dinner on my own (usually butter noodles- I was lazy and picky) he would without fail step in and concoct a creamy pasta dish for me, just because he could. I'm not complaining- how could I? I think I made a move tonight that would make my dad proud. Now, if only I had better lighting in my apartment... I was just about to have a bowl of Cheerios for dinner. Then I started searching through my cabinets.
Alfredo with Feta, Spinach, and Egg (serves 2)
-I would get that water boiling for pasta right away. You know. Don't waste time. -In a sauce pan, sautee onions with a bit of butter. Add remaining butter, let melt, then add cream. Let simmer. - Boil pasta and drain. -Add spinach to sauce, fry eggs while letting this simmer. -Serve pasta in a bowl, with sauce, top with feta and the fried egg. I thought about adding a little lemon juice, but then I remembered I don't have any. That could be super tasty. So yeah. I did a thing tonight. Cool.
