It's very cold out in the tundra that is Minnesota. Fortunately, meteorologists are telling me that after tomorrow, it's supposed to be spring. Am I skeptical? Of course. But I'll hope and hope and hope and hope for spring weather.
It's been about a month since I've made one of these posts. Let's get at it, dudes. What I'm currently digging... Bill addresses sexual assault -- I was excited to see HF742 pass through the House of Higher Education Committee yesterday and was honored to have the opportunity to testify on behalf of this bill. Thank you to Representative Marion O'Neil for making this bipartisan bill happen. Ruth Bader Ginsburg questions lawsuit -- Notorious RBG, bitches. Cream of Spinach Soup -- Pretty sure Popeye would approve of this. Fried Chicken and Waffle Tots -- You're telling me I can turn tots into a waffle? I'm listening. Cheesy Garlic Bread -- At some point I'll stop talking about garlic bread. That point is not anywhere in the near future. 14 cakes inspired by scientific concepts -- These are so creepy and I love them. Muslim Holidays Added to New York Public School Calendars -- It's about time. Hilary Duff in this month's Cosmo -- All praise Hilary. Even though she's a Republican. And Cosmo sucks. French Toast Bagels -- Two awesome breakfast foods in one. Yeah. I'll take it. Coconut Key Lime Pie -- This sounds like spring and happiness and it should be in my mouth. I believe in delicious food and I believe in those who also believe in delicious food. I love being able to share my love of food with these fantastic people. I love when people from different parts of the world come together and share their love of food. Hi, blog. I'd love to introduce you to these beautiful, amazing girls, Zainab and Jos. Jos was a foreign exchange student at my high school during my senior year. We bonded in English class over politics and chocolate (as far as I'm concerned, that's all any real friendships need). I was really sad at the end of the year when she returned to Belgium, but we've managed to stay in contact, and I demand like a bratty toddler every time she's in town to see her. Our time together always involves food. This was Jos' second time back in the States within six months. I was super excited to see her. She told me I was also getting to meet one of her long-term friends, Zainab who is also from Belgium, but has roots in Iraq. So they came and visited my apartment. I showed them a bit of campus. We ate food. We chatted and gossiped. And we participated in our very own International Baking Day. I don't have the recipes, but I really wanted to share this wonderful experience on the blog. Jos made Belgian waffles, Zainab made baklava, and I made red velvet cake with cinnamon cream cheese frosting. We had a day. We ended up in sugar comas. To be perfectly honest, it was perfect. For having just met Zainab that day, I can tell you I love her. She's genuine. She's witty. She gets my love for sugar. Jos. Let me say. You have excellent taste in humans. We also have great taste in cat friends who want to eat cake.
Will you all still love me when this blog is only dedicated to ice cream but I keep the URL and pretend I actually bake? Even if you don't love me, that's fine. Ice cream will love me. That's all I need. So I've had an ice cream maker for a month and a half now. The first couple of attempts were a little rocky, but now I've got this shit down. The problem with that? I solve all of my problems with homemade ice cream. Then I put Hershey's chocolate syrup on the chocolate ice cream I made because I secretly desire to be 700 pounds.
Chocolate Cinnamon Ice Cream (makes 1 qt)
-Whisk together ingredients in a bowl. Let set in fridge for 2 hours or overnight. -Make in ice cream maker according to directions. Yeah. That's it. It's easy. Now do you understand why I have a problem? Have you ever experienced weird life things taking over and then forgetting about things you really care about? Yeah. Me too. Life has been weird recently and I haven't blogged in a month. I'm back. I'm updating the blog tonight. It's going to get better... As long as my internet doesn't crash on me again and delete everything I've typed... AGAIN.

Tell me and I'll try to make it then post low quality photos of it at night because I'm too hungry/lazy to be a real food blogger and take pretty photos. I'm twenty. I'm a millennial. Isn't it part of my charm to be a little bit lazy? I'm kidding. Mostly. Now. Let's talk about this thing that is chickpea noodle soup. As you might know, I"m an omnivore (I'd prefer to be a straight up carnivore, but I hear that's probably not the healthiest). I don't often do vegetarian dishes. It's not really my style, you might say. But hey, it's 2015. Maybe it will become my style! Sherry of Kitchen Dilettante is one of the most kickass humans to live ever. She doesn't swear on her blog like I do, but that probably makes her cooler and more sophisticated anyways. Anyways. Sherry has asked me to embark on a foodie endeavor with her this year. She is converting many of Ina Garten's recipes into vegetarian ones without using tofu/gluten substitutes in hopes to create tasty dishes that don't freak out omnivores aka me. She's converting recipes, and I'm trying them out. It's basically the coolest thing I've ever been a part of. I hope it really takes off as the year goes on. This recipe is Sherry's take on chicken noodle soup. It's winter. We need comfort food. Sherry might live in Arizona during this part of the year, but I'll back her in her need of winter comfort food. Instead of chicken we used chickpeas. I spiced it up accidentally with too much pepper so on those cold, sub zero nights, you can still end up sweating. That's what we're aiming for, right? Ok. I'll stop rambling. Sherry's post is more eloquent than mine. Take a look at hers. Ignore me. Chickpea Noodle Soup (serves 4)
-Over high heat, bring water to a boil. Adjust heat to medium and add the Better than Bouillon Vegetarian No-Chicken Base. Stir until dissolved. -Add celery, carrots, onions, garlic, salt, pepper and noodles to stock. Let simmer until noodles are tender. -Add can of chickpeas and thyme to pot. Heat thoroughly, about 5 minutes. -Serve with bread or crackers. I made homemade bread from Breadin5. I promise I'll be back at this blogging thing. We'll have some fun. Cool? Cool. |
